Parmesan Encrusted Tilapia

Parmesan encrusted tilapia to be exact, over white rice with assorted steamed vegetables. Oh yeah! Its a tilapia fillet coated with a dry rub of spices (Cajun blackening would be fine) and grated parmesan cheese pan seared in olive oil for around four minutes on each side. Cooking time can vary. Its served on top of the rice with a little cracked pepper and a hint of shredded provolone and mozzarella cheese.

  2. Now, I haven’t eaten fish for quite a while…but, this looks dang good! Don’t think that I would pass on this plate…You have it going on with the color and texture. And to top it off with cheese…yum!

  3. I’m not a big fish eater myself really, but either this method or straight blackened is pretty awesome. Tilapia is not really too fishy tasting which I like. If I had taken a picture about 30 seconds later it would have resulted in nothing but an empty plate…
